Unity has more features of physics than mass. If you get sliding on movement or because of other objects you should add proper drag value on your rigidbody. For example, lets say you have blocks spawning over top of other blocks and this creates horizontal sliding. In my case I add drag of 1 to the objects which has mass of ~ 1 kg.

Right now, the character can't even stand still on a slope without sliding down. I know if I set the character's friction higher, they will be able to stand still on the slope. However turning up the character's friction affect's negatively affects character's movement (Movement is done by setting the rigid body's velocity).

So the rigidbody has no choice but rolling-over when steering even at low speed. You should first set the last parameter (Stiffness Factor) to 0.01-0.03 to have more realistic tyres. However you would get either a too sliding car or a car that rolls over when steering at low speeds. If you could build that in real life, it would do the same.
